Maria R. Traska is a cook, author, journalist, photographer, historian, Lindyhopper, occasional deejay, and foodie who doubles as a demo chef for a Chicago-area high-end grocery chain, where she hands out recipes every weekend, gives menu advice, assists customers, and provides general information on cooking and ingredients. She does this because she loves food, wants everyone to enjoy it as much as she does, and thinks anyone who eats should learn to cook. Why? It’s a survival skill, and there are thousands of great things to eat out there in the world that you can eat whenever you want (if you know how to fix them). If you know how to cook, you have the world’s menu at your fingertips.
